Blueberry Baked Oatmeal (Prepped Sunday, Saving My Mornings All Week)

Baked this Sunday and it is still saving my mornings mid-week. This blueberry baked oatmeal is one of those recipes that just works in our house and in a house with three kids who all have opinions about oatmeal, a unanimous win is something to celebrate.
The secret ingredient is cottage cheese. I know, I know. But you do not blend it, you do not think about it, and you absolutely cannot taste it. What you get instead is this creamy, almost French toast-like richness and a serious protein boost that keeps everyone full and focused through the morning. For our crew, two kids with ADHD and one enthusiastic nine year old who has strong feelings about breakfast, that matters enormously.
My nine year old put it together last time. Start to finish. That is how simple this is.
Why Protein at Breakfast Matters
For kids with ADHD, the difference between a high-protein breakfast and a carb-heavy one is not subtle. Protein stabilizes blood sugar which directly affects mood, focus, and regulation. The cottage cheese in this recipe bumps the protein significantly without changing the taste. A warm real breakfast that everyone actually eats is one of the best things you can do for the morning — and for the school day that follows it.
Ingredients
3 cups old-fashioned rolled oats (not steel-cut)
3/4 cup cottage cheese (up to 1 cup if you want it extra creamy)
1 1/4 cups milk — any kind works
2 large eggs, lightly beaten
1/4 cup maple syrup (honey works too)
1 tablespoon pure vanilla extract
1 teaspoon cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
2 cups fruit — blueberries, blackberries, strawberries, golden raisins, or a mix of whatever you have and like!
Instructions
Preheat oven to 375°F. Spray a baking dish with nonstick spray. Use a 9x13 for thinner slices or a smaller dish if you want it thicker.
Combine oats, cinnamon, baking powder, and salt in a large bowl. Toss in your fruit and stir to coat — this helps keep it from sinking to the bottom.
Add the cottage cheese straight in — no blending needed. Stir in the milk, eggs, maple syrup, and vanilla until everything is combined.
Pour into your prepared baking dish. Cover with foil and bake for 30 minutes.
Remove the foil and bake for another 15 to 20 minutes until the top is golden and set.
Serve warm with fresh fruit, nuts, a drizzle of maple syrup, or a splash of milk. Store covered in the fridge all week. Reheat in the microwave for 60 to 90 seconds.
The Cottage Cheese Secret
Do not bother blending it smooth. The texture of the oats conceals it completely and what you get is a creamy richness that makes this taste like the most perfect French toast. Use 3/4 cup with lighter milks or go up to a full cup if you want it extra creamy.
Mix It Up
We rotate through blueberries, blackberries, strawberries, and golden raisins depending on what is in the house. Chopped walnuts or pecans on top before baking add a great crunch. A handful of chia seeds or flaxseed stirred in adds even more nutrition without changing the flavor.
